AER’s Negroni Week menu combines Indian clay-pot techniques with modern cocktail craft and recipes from Four Seasons bars around the region.
AER at Four Seasons Hotel Mumbai is marking Negroni Week with a menu that gives the classic Italian aperitivo a distinctly Indian treatment. Running from September 22 to 28, 2026, the programme uses clay-pot techniques alongside guest recipes from Four Seasons bars in Bengaluru and Bangkok.
Indian craft meets an Italian classic
The central idea is to reinterpret the Negroni without losing the bitter, aromatic character that makes the drink recognisable. AER is using familiar cocktail structure as a starting point and then introducing techniques and flavour references connected to India.
That approach avoids simply adding a local garnish to an established recipe. Instead, the preparation method itself becomes part of the regional identity of the drink.
Amaro Nero rests in earthen clay
Amaro Nero combines Buffalo Trace Bourbon, The Great Amaro Liqueur and bitters before being rested overnight in an unsalted butter-seasoned earthen clay pot. The technique draws on Indian traditions of using clay vessels to preserve, soften and transform flavour.
The finished drink is described around bitter-sweet orange, dark cacao and roasted almond notes. By using the vessel as part of the process, AER turns a familiar spirit-forward cocktail into something that carries a stronger sense of local craft.
A lighter route with La Dolce Vita
The second house interpretation, La Dolce Vita, uses Malfy Gin, Amaro Montenegro, Campari and cold-brew coffee, finished with soda. It takes a brighter route, using citrus, bitterness and coffee while giving the drink a more refreshing structure.
Together the two serves show different ways of moving away from a rigid classic formula. One leans into texture and earthen-pot ageing, while the other opens the drink with coffee and carbonation.
Regional bars join the menu
The Negroni Week selection also includes drinks travelling from Copitas at Four Seasons Hotel Bengaluru and BKK Social Club at Four Seasons Hotel Bangkok at Chao Phraya River. That gives guests a compact view of how bartenders in different Asian cities are approaching the same cocktail family.
AER is serving the programme from 5:00 pm during the week, with cocktails priced at INR 1,800 plus taxes. For Mumbai’s rooftop-bar scene, the collaboration turns a global cocktail event into a showcase of regional technique rather than a simple promotional week.
