The new collection comprises nine signature cocktails and three mocktails, using ingredients such as sake, red shiso salt and yuzu kosho. Their combinations place Japanese culinary references within familiar and experimental drinks rather than relying on imported flavour profiles alone.
A journal rather than a standard menu
Each drink is presented with a tracing-paper illustration of its leading flavours, reflecting the feel of an old botanical journal. Monthly micro-seasonal creations add another layer to the collection, allowing the list to respond to ingredients available at their peak.
