Two evenings devoted to a province's produce
Four Seasons Resort and Residences Whistler will host A Culinary Journey Through British Columbia during the Cornucopia food and drink festival on 13 and 14 November 2026. Executive chef Shiv Kappal will present the tasting programme in SIDECUT Steakhouse's private dining room, drawing on the places and ingredients he has encountered across the province.
The release was issued on 15 September and describes a forthcoming reservation rather than an event already completed. The concept takes a regional route from Pacific coast to mountain interior, giving the meal a geographic structure.
Bison, crab and the changing landscape
The advertised ingredients include hand-cut bison tartare, Dungeness crab, wild blueberries and Pemberton potatoes, each connected to a different part of the province's food culture. The kitchen plans to explain those choices during the meal, turning a tasting menu into a narrated exploration of regional produce.
Individual dishes may be adapted to seasonal supply, and the hotel has not claimed that every ingredient comes from a single producer. Guests should check dietary requirements and the final menu when booking.
Wines close to home
The announced pairings include wines from Gray Monk, Pentâge, CheckMate and Phantom Creek, placing British Columbia producers alongside the food. Cornucopia also hosts wider tastings and events around Whistler, so the hotel dinners are a distinct part of a broader festival programme.
The private format is designed to give guests closer access to the team behind the menu. Places and pairings are limited by the event structure rather than available throughout the hotel's ordinary restaurant calendar.

The dinners run from 6pm to 9pm on both evenings, making them suitable for a short autumn escape. Whistler is an inland mountain destination, which should be combined with any marine itinerary through separate transport and accommodation arrangements.
