Dining quality depends heavily on spaces guests rarely see. Galleys, pantries, serving areas and clearing routes must connect efficiently with the dining room while containing noise, odours and operational activity behind a calm hospitality experience.

Dining rooms depend on unseen operational space

The elegance of a meal is supported by preparation, plating, drink service, clearing and washing. These activities require real space and circulation. Compressing support areas to enlarge the dining room can make service slower and more visible to guests.
