Viareggio Opens Superyacht Chef Master Programme for December 2026

NAVIGO and ISYL ITS Academy will run a Yacht Chef Master Programme in Viareggio on 1–4 December, covering provisioning, guest service and operational galley skills.

Why restaurant experience is not enough to run a superyacht galley

Some of the practical demands placed on a professional superyacht chef have little equivalent in a conventional restaurant kitchen. A crew chef may be responsible for sourcing ingredients across different countries, maintaining cold-chain records, producing meals for passengers with distinct preferences and meeting a last-minute owner request while the yacht is moving. NAVIGO and Fondazione ISYL ITS Academy have developed the Yacht Chef Master Programme in Viareggio to focus on that operational gap.

The initiative is a collaboration between True Yachting Training, NAVIGO's professional education division, the ISYL foundation and Miami-based Love to Italy Academy. Rather than presenting an ordinary culinary qualification under a yachting label, its organisers say the teaching programme is built around the realities of private and charter vessel operations.

The first course has dates, location and a named lead chef

The inaugural programme is scheduled for 1–4 December 2026 at Hotel Esplanade in Viareggio. It was formally presented on 25 September during the Monaco Yacht Show, connecting the Italian yacht-building region with an international market for crew hospitality services.

Marco Tognon will lead the first edition. He won the 2023 Superyacht Chef Competition and has worked as executive chef aboard the 72-metre SILVER FOX. His role gives the course direct experience of large-yacht galley organisation, guest demands and the relationship between chefs, captains and other service staff.

Provisioning and cold-chain control matter as much as the menu

A yacht may order supplies for an extended passage in one port and then change its next destination at short notice. Food selection must account for storage space, safe temperatures, available galley equipment, delivery logistics and customs restrictions on particular ingredients. A chef also needs a reliable plan when expected supplies do not arrive.

The course covers provisioning, cold-chain management and the organisation of a working galley. These tasks influence guest service but also food safety and crew workload. A menu that looks impressive on paper is of limited value if the yacht cannot store its ingredients safely or prepare it without disrupting other operations.

Private ownership and charter place different pressures on crews

On a privately used yacht, a chef may learn an owner's preferences over many trips and adapt the galley to familiar routines. Charter operations can mean completely different guest requests each week, with limited time to understand dietary restrictions and prepare for specific celebrations or social events.

The teaching programme includes practical exercises and a simulated charter service. Students will also examine hierarchy onboard and how to communicate with captains, yacht managers and recruitment agencies. These topics reflect the fact that technical cooking skills alone do not determine whether someone works effectively within a small crew living close together for weeks.

Professional development has a wider role in the superyacht workforce

NAVIGO and ISYL work within the Tuscan marine-industry network, where builders, service businesses, managers and training organisations depend on a pool of reliable specialist employees. Love to Italy Academy brings another dimension by connecting Italian culinary practice with clients and businesses in the United States.

Course organisers describe the Viareggio edition as the opening stage of a broader educational offering. The programme should not be treated as an automatic ticket to employment or a substitute for marine safety certification required for particular roles. Its value will depend on how well participants can translate the teaching into safe, professional service aboard real yachts.
